Pistachio-Crusted Salmon with Asparagus is both tasty and packed with nutrients that benefit your mind. Salmon’s omega-3s and the antioxidants, and vitamin B6 in pistachios work together to support cognitive function. Plus, it’s a low-carb, easy dinner that’s as nutritious as it is flavourful.

Ingredients

Serves 2

Salmon and Pistachio Crust

  • 340 grams of salmon
  • 1/4 cup pistachios (shelled)
  • 2 tbsp Dijon mustard
  • 1 tbsp garlic (minced)
  • 1/4 tsp salt
  • 1 tbsp olive oil

Asparagus

  • 12 asparagus spears
  • 1 tbsp garlic (minced)
  • 1/4 tsp salt
  • 1 tbsp olive oil
  • 1 lemon

Method

  1. Preheat your oven to 200 degrees Celsius
  2. Finely chop the pistachios or use a food processor.
  3. Place the salmon and asparagus on a baking sheet. If you’re using frozen salmon be sure to thaw it completely before starting.
  4. Spread Dijon mustard over the salmon and season with garlic and salt. Coat the salmon with the chopped pistachios.
  5. Season the asparagus with garlic and salt, then drizzle olive oil over everything.
  6. Bake for 12–15 minutes until the salmon turns opaque with a pink/orange colour. To avoid burning the crust, cover the salmon loosely with foil for the first half of baking, then remove to get that golden crust.
  7. Squeeze fresh lemon juice over the salmon and asparagus before serving.
  8. Pair this dish with a fresh salad, quinoa, or roasted potatoes, and don’t forget an extra squeeze of lemon for a tangy zing!
