A healthy and filling meal, egg fried rice is tailor-made for days when you need a satisfying meal. Fortunately, it can be prepared and cooked in minutes. For a larger meal, this dish adds character to the ultimate warm weather BBQ line up.

1. Place the rice in the bottom of a large mug. Layer the red pepper, peas, mung bean sprouts, green onion, and layer the cabbage on top.
2. Cover the mug and puncture the cover with one or two small holes. Microwave on high for 1 minute 15 seconds. Important: All microwaves are different, so cooking times may vary.
3. In a small bowl, beat the egg and mix in the soy sauce, onion powder, sesame oil, and five-spice powder.
4. Add the egg mixture to the mug and stir until well combined.
5. Cover the mug with the perforated cover again, and microwave on high for 75-90 seconds. Important: All microwaves are different, so cooking times may vary.
6. Take the mug out of the microwave and give the contents a good stir.
7. Leave to rest for 1-2 minutes, then use a fork to fluff up the rice before serving.
Believe it or not, it’s as easy as that. This healthy fried rice dish can be thrown together in minutes and added to any larger platter or BBQ spread.
